This dough is 65 hydration 3 salt and 25 yeast active dry.
Pure cane sugar 1 1 2 tsp.

Add salt and dissolve in water.
Slowly add the flour to the water and mix by hand until a ball is formed.

Kosher salt 1 tbsp.
Remove from the bowl and place on your work bench knead by hand for approx 10 mins.
Directions mix water yeast salt and honey together until all are dissolved.
Dough should be a nice.
Ingredients 600 g 00 flour 390 g water.
The dough should form ears and the mixing bowl should be essentially dry.
Mix at moderate speed for 8 10 minutes.
Pour water in a mixing bowl.
This recipe uses bakers percentages which means the amount of water added is based on the total amount of flour.
The cook time should be 90 seconds.
